Here I go again with my new obsession. No bake desserts.
I told you I get hooked on themes and for the last few weeks my theme has been “Do not turn on that oven!”
It’s been way too hot for that mess here in New Jersey!
So today I have for you another cheesecake (yes, another cheesecake since that was my theme about a month ago, it was a literal cheesecake festival up in here for a good month straight!)
One of the most popular cakes I ever made back in my
bakery days was the Mint Chocolate Layer Cake.
I am more than thrilled about this, because mint chocolate is one of my favorite combinations too!

What happened to me?
I went from being a No Bake Dessert Hater ~ to a No Bake Dessert Lover!
I guess it’s the Taurus in me that takes some prodding to get me into new territory; but once I get there, look out!
Well here it is.
New and improved 2017 version of
the ultimate Death to Diets Cake.
Some of you may already be familiar with this signature creation I introduced several years ago when I still owned my bakery.
The idea for this cake came about when I was on one of my many diet phases.
This is my new take on the classic Strawberry Shortcakes, only now made with Corn Cake Biscuits!
That’s right! Strawberry Corn Cakes have hit the scene, and just in time for summer strawberry season!
Ah the abundance of summer!
I love that we have so much wonderful food to choose from during the summer months!
So much so, that I can’t keep up with all the recipe ideas that are swirling in my head!
My neighbor has a fantastic garden and she just gave me a bunch of Rhubarb! I love love love Rhubarb!
However this summer vegetable is not ready to eat upon picking. It’s sour demeanor requires some attention, cooking and definitely some sugar to make it a pleasurable experience!
Summer is around the corner so that means key lime is about to pop on the scene!
Key lime everything is perfectly okay with me though!
I love, love, love lime; and combined with a cheesecake?
Well that is a no-brainer!
Another classic dessert vegan-ized for everyone to enjoy!
These are the real deal, never goes out of fashion strawberry shortcakes biscuit style, not to be confused with a
strawberry shortcake cake.
These flaky, buttery, light delicate biscuits will melt in your mouth, so needless to say they actually can stand alone; but a piling of
fresh strawberry compote and coconut whipped cream never hurt so let’s go for the gusto!
Vegan or not vegan~ If you are like me, you are here because you are looking for a thickening alternative to
gelatin for cold preparation desserts.
Even before my vegan days and way back to my vegetarian days I always thought gelatin was disgusting.
Whenever I made cold preparation desserts with gelatin, the smell of it upon melting was just so off putting.
But it makes total sense since after all gelatin is nothing more than a protein obtained by boiling skin, tendons, ligaments, and/or bones with water. Usually obtained from cows or pigs.
Hence the smell when you melt it.
