Wacky Banana Cake is an easy one bowl mix

No eggs or dairy and no egg replacers 
This is the original depression era cake with all the ingredients you already have in your pantry

bake the batter into bundts, loaves, sheets or rounds layers

If you watched the YouTube video for how I made this cake recipe you will know I did it wrong!! The recipe instructions listed below are correct!! Add water instead of rum for alcohol free version

Ingredients
  

  • 2 large Super Ripe Bananas 250g
  • 7 Tbs Vegetable Oil 7 100g
  • 1 cup Brown Sugar 200g
  • 1Β½ cups Plant Milk 355ml
  • 3 cups Cake Flour 360g
  • 2 teaspoons Baking Soda
  • 1 teaspoon Salt 6g
  • 1 teaspoon Vanilla Extract 5ml
  • 6 Tbs Rum *optional 90ml

Instructions
 

  • Preheat the oven to 350℉ & grease your cake pan(s)
  • Combine the sugar, plant milk, vanilla extract, rum *if using & the oil together in a large mixing bowl whisk smooth
  • Add the mashed banana & whisk smooth
  • Add the sifted dry ingredients (flour, baking soda & salt) & whisk just until combined- do not overmix
  • No matter what pan size I am using I like to always check my cakes at around 18 minutes just to see how they are doing.
  • If baking in a sheet pan 9" x 13" it will probably take close to 30 minutes to bake, just do the toothpick test or finger indent test - if the cake is springy to the touch when you gently press the centers, it is done!

Notes

For the Rum Glaze shown in the video: 2 cups of Confectioners Sugar + 1 tablespoon of Rum~ adjust the consistency with plant milk for pouring over the warm cake

    Such an easy and yummy recipe! We made a few changes to the recipe -subbed the flour for gluten free flour, added cloves & nutmeg, and realized we were out of plant milk so made more plant milk with an extra banana and water blended together, we also omit the rum and it was still perfect.
    Thanks for sharing this fab whacky cake
