Notes for Success:

For those who do not have or want to use protein powder simply replace with almond flour or even whole wheat flour instead

In the video you will see I iced some of them with buttercream for a cupcake rather than a muffin!
After all cupcakes are merely muffins with icing!

Ingredients
  

  • 2 cups Spinach Fresh Packed
  • ½ cup Mashed Banana ½ cup
  • ¾ cup Plant Milk 180ml
  • 2 teaspoon Vanilla Extract
  • 4 Tbs Coconut Oil 60ml
  • ½ teaspoon Salt
  • ½ teaspoon Baking Soda
  • 2 teaspoons Baking Powder
  • ¾ cup Your Favorite Sweetener
  • ½ cup Vegan Protein Powder
  • 1 cup Old Fashioned Oats
  • 1 cup Whole Wheat Pastry Flour 125g

Instructions
 

  • Combine all the ingredients for the muffins in a blender or food processor & blend smooth
  • Portion into lightly sprayed cupcake liners & bake in a preheated 350°F oven for approximately 25-30 minutes or until they are springy to the touch when you gently press the centers.

Storage Muffins can be stored at room temperature for up to 4 days in an airtight container

    Is there a substitute for the protein powder? Maybe oat flour?

      Yes! I did make a note on the written recipe to do exactly that! oat flour or regular will be fine

    I made these last night! I ran out of protein powder so used only 1/4 cup protein powder and 1/4 all purpose flour. These came out amazing, bright green and so moist and fresh. I didn’t use oil on the liners and the muffins didn’t stick much at all. Thanks for a great recipe, I will make this again!
