Birthday Cake Whoopie Pies

A simple, fun and whimsical spin on the traditional birthday cake!

Birthday Cake Whoopie Pies are so easy to make with minimal ingredients and very little time needed!
Sprinkles are optional but honestly can we even have a birthday without sprinkles?

Notes for Success:

For the scratch cake-cookie recipe CLICK HERE for Vanilla and HERE for Chocolate 

The recipe below is for the box cake recipe and Duncan Hines Cake Mix is accidentally vegan since they do not source their mono & diglycerides from animals. I believe that any cake box brand you use will most likely work although I have not been able to try them all
Be sure to use the 15.25ounce box for best results

Bob’s Red Mill egg replacer is my preference although any dry blend egg replacer will work great! And I will tell you a secret I have accidentally forgotten to add it and they still came out great!

Finding Vegan Sprinkles can be a difficult task so maybe try your hand at my Homemade Recipe for sprinkles instead!

Ingredients
  

  • 1 ~ 15.25oz Box Duncan Hines Cake Mix
  • ¼ cup All Purpose Flour 30g
  • 1 Tbs Egg Replacer
  • 6 Tbs Plant Milk 6 Tablespoons 90ml
  • 8 Tbs Vegetable Oil 8 Tablespoons 118ml

For the Icing

  • ½ Recipe American Buttercream

Instructions
 

  • In a large mixing bowl combine all of the ingredients together with a whisk or a spatula to a smooth batter~ it will be thick like brownie batter, more like a dough
  • Refrigerate the dough for 30 minutes & once chilled, Preheat the oven to 350°F & then scoop balls of dough approximately 1 Tbs or use a small cookie scooper
  • Place them on a parchment lined sheet pan spaced 2 inches apart
  • Bake for 10-15 minutes *I think mine took 12 minutes to very light golden~ do not over bake or the cookies will be dry. I like mine slightly chewy & soft inside.
  • Next prepare your favorite recipe for vegan buttercream
  • Once the cake mix cookies are fully cooled fill the with buttercream and then sandwich them together, roll in sprinkles, nuts, toasted coconut etc....

Storage Birthday Cake Whoopie Pies will stay fresh for up to 4 days in an airtight container at room temperature. You can freeze them for up to 2 months wrapped well
