Move over Ben and Jerry’s your Netflix and Chill just got turned into a cake!

While I haven’t bought Ben and Jerry’s ice cream in ages this ice cream flavor caught my eye!
So here it is today in cake form! Netflix and Chill Peanut Butter Mousse Cake!

Brownie bottom, Peanut Butter Mousse filling and a pretzel crunch throughout!
Guaranteed this is one cake that will have you begging for more!

Peanut butter mousse is probably one of the easiest mousse recipes to make

Super stable while being ultra creamy and light at the same time!
With minimal ingredients and in just about 2 hours this cake can be yours!

Notes for Success:

Agar can be a tricky ingredient, a heavy hand ~ even a pinch too much~ can be the difference between creamy delicious and rubbery inedible!
Pay attention to the strength of agar you are using in comparison to the one that author of the recipe is using
Typically I use 900 strength in my recipes By Landor Trading Co *not sponsored

Aquafaba is the water from a can of chickpeas although you can also boil your own.
I find that canned brine makes a much stronger meringue though, so if you do boil your own be sure to reduce it down for a super concentrated liquid.

Building this cake in a 7″ springform pan with the bottom removed and the acetate cake strip is really helpful for a clean release

For the whipped cream you will need 2 cups of whipped volume to fold into the mousse.
Country Crock is all I can get near me now, and 1 cup of liquid whips up to 2 cups total volume.
All brands of vegan whipping cream are different and some will not really fluff they just thicken
So whatever you use be sure that you have 2 cups of total whipped cream volume to fold in.

Peanut butter mousse is probably one of the easiest mousse recipes to make. It's super stable while being ultra creamy & light at the same time! With minimal ingredients in just about 2 hours this cake can be yours!

Ingredients
  

  • 1 Recipe Fudge Brownies

For the Peanut Butter Mousse:

  • 1 cup Creamy Peanut Butter 250g
  • 4 Tbs Sugar or Sugar alternative 50g
  • ½ cup Plant Milk 118ml
  • 1 teaspoon Agar Powder
  • ⅓ cup Aquafaba 80ml
  • 1 cup Vegan Whipping Cream 240ml
  • ½ cup Pretzels
  • ½ cup Brownie Chunks

For the Garnishes:

  • ¼ cup Creamy Peanut Butter
  • ¼ Recipe Ganache
  • Pretzels & brownie chunks from reserved layer

Instructions
 

  • First prepare the brownie recipe & bake the batter into 2-7" round pans
    One layer will be the base for the mousse cake & the other will get chunked up for the filling & the topping
  • Prepare your 7" ring mold or springform pan with acetate cake strip then insert one brownie layer into the bottom ~ reserve in the refrigerator & then chop up the other layer into small chunks~ also reserve until you prepare the mousse
  • Next prepare the peanut butter mousse by whipping your aquafaba to stiff glossy peaks, reserve & then whip the vegan whipped cream to medium firm peaks
  • Next in a large mixing bowl slightly melt the peanut butter (either over a double boiler or in the microwave for 20-30 seconds)
  • Combine the plant milk with the sugar (or sugar alternative) with the agar powder in a small sauce pot & bring to a rolling boil whisking often to avoid burning the bottom
  • Pour the hot plant milk mixture into the peanut butter & whisk quickly until smooth, it will tighten up quickly
  • Add 1 cup of the whipped cream & whisk vigorously to lighten the peanut butter mixture then add all of the whipped aquafaba & last add the remaining whipped cream
  • Fold in the chopped pretzels & brownie chunks then pour into your prepared ring mold with the brownie base.
  • Freeze for 1 - 2 hours until completely set then top with the melted ¼ cup of peanut butter & ganache drizzles & remaining pretzels and brownie chunks
  • Refrigerate until serving

Storage  Peanut Butter Mousse Cake must be kept refrigerated and will stay fresh for 1 week. For longer storage freeze wrapped well for up to 1 month
